Fresh salad with goat’s cheese and apple samosas

Ingredients

    • 1/2 Pink Lady® apple
    • 1 tbsp of honey
    • 4 cherry tomatoes
    • 100 g of soft goat's cheese
    • Fleur de sel (fine, snow-like salt crystals), pepper
    • 2 slices of cured ham
    • 2 filo pastry sheets
    • Rocket salad
    • Olive oil
    • Wholegrain mustard
    • Balsamic vinegar

Step 1/1 : Preparation

  • Preheat the oven to 170°C.
  • Start by making the Pink Lady® apple and goat’s cheese samosas.
  • Peel and core the apples, then cut them into thin strips. Fry them in a pan with a little butter and honey, until caramelised.
  • Cut the filo pastry sheets into strips a few centimetres wide.
  • On each strip, place a few slices of apple, a spoonful of soft goat’s cheese, a drizzle of olive oil, salt and pepper. Fold each strip into a triangle, as many times as necessary.
  • Place the samosas on the oven rack, and bake them for 10 minutes at 170°C, turning them over halfway through.
  • Meanwhile, arrange the salad on the plate, along with the halved cherry tomatoes and slices of cured ham.
  • Prepare the dressing using olive oil, balsamic vinegar and wholegrain mustard.
  • Arrange the samosas on the salad, and drizzle with dressing to taste.
