Apple and cinnamon muffins

Ingredients

  • For the muffins
    • 1 Pink Lady® apple
    • 190 g flour
    • 90 g sugar
    • 1 packet baking powder
    • 1 egg
    • 80 g salted butter
    • 120 ml milk
    • 1 tsp vanilla extract
  • For the crumble topping
    • 75 g flour
    • 1 tsp Cinnamon
    • 40 g de butter
    • 75 g brown sugar

Steps

Step 1/2 : For the muffins

  • Preheat oven to 200°C.
  • Melt the butter in the milk in a saucepan.
  • Break the egg in a bowl, and whisk in the sugar, then gradually pour in the melted milk and butter mixture, and add the vanilla.
  • Add the flour, baking powder and diced Pink Lady® apples, and mix well.
  • Divide the batter between the previously lined muffin moulds. Set aside while you prepare the crumble topping.

Step 2/2 : For the crumble topping

  • Mix the brown sugar, butter and flour, then add the cinnamon.
  • Sprinkle a little crumble topping over each muffin.
  • Bake for 5 minutes at 200°C, then 20 minutes at 180°C.
  • Cool and serve warm.
