Ingredients
For the muffins
- 1 Pink Lady® apple
- 190 g flour
- 90 g sugar
- 1 packet yeast
- 1 egg
- 80 g salted butter
- 120 ml milk
- 1 tsp vanilla extract
For the crumble topping
- 75 g flour
- 1 tsp cinnamon
- 40 g butter
- 75 g brown sugar

For the crumble topping
- Preheat oven to 200°C.
- Melt the butter in the milk in a saucepan.
- Break the egg in a bowl, and whisk in the sugar, then gradually pour in the melted milk and butter mixture, and add the vanilla.
- Add the flour, baking powder and diced Pink Lady® apples, and mix well.
- Divide the batter between the previously lined muffin moulds. Set aside while you prepare the crumble topping.
- Mix the brown sugar, butter and flour, then add the cinnamon.
- Sprinkle a little crumble topping over each muffin.
- Bake for 5 minutes at 200°C, then 20 minutes at 180°C.
- Cool and serve warm.
