- 2 slices farmhouse bread
- 2 slices smoked trout
- 100 g soft goat’s cheese
- 8 green asparagus tips
- 1 drizzle of olive oil
- Chopped chives
- Fleur de sel (fine, snow-like salt crystals), pepper
- 1/2 Pink Lady® apple
- 1/2 lemon

Preparation
- Bring a pan of water to the boil with a pinch of salt.
- When the water begins to boil, add the asparagus tips and cook for around 7 minutes over medium heat.
- Then plunge them for a few seconds into a bowl with water and ice cubes to stop the cooking process and preserve their nice green colour.
- Remove them from the water, and place them on a clean cloth or kitchen roll.
- Cut the Pink Lady® apple into thin strips, and season with lemon juice and a drizzle of olive oil.
- Place the soft goat’s cheese, chopped chives, salt and pepper in a small bowl, and mix well.
- Spread the goat’s cheese mixture on the slices of farmhouse bread.
- Place the drained asparagus tips, apple slices and smoked trout on top. Sprinkle with chopped chives.
- Serve with a green salad and vinaigrette dressing.
