- 2 Pink Lady® apples
- 250 ml water
- Salt and pepper
- 2 tbsp olive oil
- 125 g chickpea flour
- 1 half ½ bunch fresh chives
- 3 or 4 slices smoked salmon
- 1 soft goat’s cheese
- A few salad leaves of your choice

Preparation
- Start by combining the chickpea flour, water, olive oil, salt and pepper to make the socca batter. Let it rest for 30 minutes.
- Heat a frying pan with a little olive oil, pour in a ladleful of batter and cook for a few minutes, then turn the socca over to cook the other side. Repeat with the remaining batter to make several soccas.
- Crush the goat’s cheese using a fork and mix with finely chopped chives, a drizzle of olive oil, salt and pepper.
- Spread the mixture over the soccas, then garnish with diced Pink Lady® apples, pieces of smoked salmon and a few salad leaves.
- Enjoy sliced, like a pizza.
