Smoked salmon and apple socca pizza

Ingredients

  • Preparation
    • 2 Pink Lady® apples
    • 250 ml water
    • Salt and pepper
    • 2 tbsp olive oil
    • 125 g chickpea flour
    • 1 half ½ bunch fresh chives
    • 3 or 4 slices smoked salmon
    • 1 soft goat's cheese
    • A few salad leaves of your choice

Steps

Step 1/1 : Preparation

  • Start by combining the chickpea flour, water, olive oil, salt and pepper to make the socca batter. Let it rest for 30 minutes.
  • Heat a frying pan with a little olive oil, pour in a ladleful of batter and cook for a few minutes, then turn the socca over to cook the other side. Repeat with the remaining batter to make several soccas.
  • Crush the goat’s cheese using a fork and mix with finely chopped chives, a drizzle of olive oil, salt and pepper.
  • Spread the mixture over the soccas, then garnish with diced Pink Lady® apples, pieces of smoked salmon and a few salad leaves.
  • Enjoy sliced, like a pizza.
